Carpe Brewem: Empyrean Brewing Co releases new line of beers starting with a barrel-aged stout

The dawn of a barrel aged beer is upon us. The crew at Empyrean Brewing Co. has been playing with barrel aged draft offerings for years. Now they are ready to put some of these unique beers in bottles.

Carpe Brewem’s “Nibbed In The Barrel Oatmeal Stout” starts with a big and full-bodied 7.4% oatmeal stout. Once fermented, they placed the beer in Kentucky bourbon oak barrels with chocolaty cacao nibs. Allowed to rest for five months, the beer absorbed the rich and refined flavors toasted oak, bourbon and cocoa creating a one-of-a-kind brew.

And that’s exactly what this beer is – prepared in a small batch, its availability is limited. Packaged under the Carpe Brewem label means “seize this beer” before it’s gone.

Brewed under the watchful eye of Head Brewer Rich Chapin, he describes its taste as “bourbon, booze and baker’s chocolate greet your nose, while flavors run deep in with layers of caramel, vanilla, toasted oats and bourbon, followed by a dry, dark chocolate finish.” Chapin says it complements dishes like roast beef and oatmeal chocolate chip cookies.

Carpe Brewem “Nibbed In The Barrel Oatmeal Stout” will be available in 4-pack bottles at select liquor and grocery stores in Lincoln and Omaha starting on Friday, November 22nd.  A non-barrel aged version of the same beer is also available on tap at Lazlo’s Brewery & Grill and FireWorks Restaurant.
