Many of you probably saw the article yesterday in the World Herald regarding Zac Triemert's return to brewing and distilling in Omaha. If not, here is the link.
Zac was kind enough to give us a call and talk to me a little about what he has planned and it sounds great. He still kept some things close to the vest, like beer styles and such, but it sounds great. He plans to have a very diverse selection with a lot of unique beers that will only be available in the tasting room. That is to say nothing about what he plans for his spirits. One last note, he thought he would be putting in a 10-15 barrel system that will support both the beer and the whiskey.

Omaha’s Newest Brewery and Distillery
Award-winning brewer to release the first globally sourced vatted malt
whiskey.
Triemert and Mulkins anticipate Borgata, named for an old
Italian Mob word meaning “family,” will begin serving and distributing beer and
spirits throughout the Midwest by this time next year. The business will
include a manufacturing brewery and distillery along with a downtown tasting
room.
“We like the idea of a company that can become a real part
of Omaha’s landscape and traditions. In creating Borgata, Holly and I are
looking forward to building a company that we can pass down to our three
children.”
Hosting public and corporate events at the tasting room will
be a key part of the Borgata business Mulkins said. “I managed all the events
at Lucky Bucket and loved it. At Borgata, this will be a big focus and a
wonderful way to grow the Borgata family.”
The tasting room will also offer unique beers and spirits
produced in small batch that are only available on-site. Triemert and Mulkins
also anticipate the retail location will celebrate the current farm-to-table
movement by offering small-bite dishes made from ingredients sourced from local
farmers as much as possible.
Triemert said he and Mulkins are looking forward to offering
a variety of unique beverages, some of which have not been produced in
Nebraska, and not even in the USA. “We’re innovators. We will be bringing new ideas into the ever
growing beer scene,” he said “I’m also super excited on the spirits front -
Borgata will initially focus on whiskeys and we plan to release the first
globally sourced vatted malt whiskey.”
Vatted malt whiskey is created by combining selected single
malt whiskeys together to create a one-of-a kind blended malt whiskey. Some of
Borgata’s single malt will be included in the bottle.
Triemert earned a Bachelors Degree in Microbiology from the
University of Wisconsin and Master’s Degree’s in Brewing and Distilling from
Heriot-Watt University in Edinburgh, Scotland. He has been a brewer in Omaha
for more than a decade and has contributed significantly to the city’s beer
culture.
Triemert has won numerous national beer and spirits awards
over the years. He also was named Young Business Person of the Year by the Midlands Business Journal in 2010, Food and Wine named him Top 40 Movers
and Shakers in Food in 2010 and Worth Magazine included him on the Top
20 Business People to Watch list in 2011.
