Odell Deconstruction Bottle Party @ Bricktop

We have a really cool bottle party this Wednesday from our friends from Odell Brewing Company in Fort Collins, Colorado. 'Deconstruction' is way more than just a 10.5% Golden Ale. In fact, as the label explains, this is 44% Ale, 33% Ale aged in oak barrels, 20% in Bourbon barrels, and 3% in Wine barrels.

Beyond all the blending percentages is a very, very interesting ingredient. The boys at Odell have isolated a local wild yeast strain that they have named "Fester", and inoculated a portion of the barrels with it. "Fester was cultured from a Berliner style mash we created in our lab with our silo malt. Since wild yeast is essentially everywhere, we were able to culture it from right outside the brewery. After isolating Fester from other yeasts living in the small culture, we propagated it until we reached desired pitching quantities for each inoculation. Fester has proven to give us a uniquely tart, grapefruit-esqe sourness we have never had from any other wild yeast with which we have worked.
